Madagascar produces 65% of the world’s vanilla, and they’ve been known to throw the market into chaos. Vanilla beans are actually very hard to grow. The vanilla plant is actually a vine that takes two to four years to reach maturity. When the flowers blossom, it is only open for one day a year. There's no time to wait for birds or insects to pollinate, each bloom must be pollinated by hand. Once the pods have matured and are harvested, they need several months to cure into what we refer to as the vanilla bean. Another several weeks is needs to produce vanilla extract by actually percolating ethyl alcohol and water through chopped cured beans. The Bourbon vanilla beans for this extract are hand-cultivated on the northeast coast of Madagascar. Our vanilla extract adds a robust floral flavor and gets better with age. Preferred by professional pastry chefs and bakers to enhance aroma and complex floral flavors.
